The Deliciousness of Cherry and Chocolate in Chocolate Covered Cherry Mice

Unlike the Chocolate Christmas Mice on plengdut.com's previous post, where it uses cookie crumbs, the Chocolate Covered Cherrys Mice's main ingredient is cherry fruit. There are also two kinds of processing, namely by using bake and no bake.

Ingredients:

  • 1 jar maraschino cherries with stems, drained and dried
  • 6 ounces semisweet chocolate
  • 1/2 tsp butter
  • 1 ounce paraffin, chopped
  • 1/2 cup chocolates chips
  • 1/2 cup sliced almonds
  • 1 tube red (clear) gel icing

Instructions:

  1. Line a cookie sheet with waxed or parchment paper.
  2. Rinse the maraschino cherries, drain thoroughly, and let dry on paper towels, turning often. The cherries must be completely dry or the chocolate will seize and get crumbly.
  3. Gently melt chocolate, butter, and paraffin in a double boiler until smooth, stirring often to prevent burning. Once melted, turn off heat, but leave in the double-boiler on the burner.
  4. Dip dry cherries in melted chocolate to completely cover up to the stem. Place on lined cookie sheet. Immediately press on chocolate chip, flat side to the front of the dipped cherry, to form head.
  5. While chocolate is still warm, wedge two sliced almonds between chocolate chip and cherry to form ears. Let cool.
  6. Use a toothpick to dab beady red eyes on either side of the chocolate chip with the red gel icing.
  7. Refrigerate to firmly set chocolate.

Chocolate Covered Cherry Mice (no Bake)

Holiday baking is a time to spend with the little chefs in your life. This example of the Chocolate Mice can become a way for children to have fun all while creating a fun candy treat.

Ingredients:

  • 24 maraschino cherries with stems
  • Waxed paper
  • 3/4 cup semisweet chocolate chips (you could also use chocolate bark)
  • 24 milk chocolate Hershey’s Kisses, unwrapped
  • 48 almond slices
  • 2 Tbsp. Black & White Icing

Instructions:

  1. Rinse cherries and pat dry with paper towels.
  2. Dip cherries in chocolate and set down on parchment or wax paper.
  3. Attach an unwrapped Hershey Kiss to the cherry opposite to the stem, as the head.
  4. Attach two sliced almonds as ears.
  5. Pipe icing eyes onto the Hershey Kiss
  6. Let harden and enjoy.
